Domaine Maldant Pauvelot is a wine estate in Burgundy. The Estate’s vinegar factory Vinaigrerie Artisanale de Beaune was set up by the owner Jean Luc Maldant to use waste from the wine industry – wine excess, tasting bottles, old cellar etc. The main objective is transforming qualitative wine into qualitative vinegar. All the vinegars are aged in oak barrels.
